The production of Pai Mu Tan, also called Bai Mudan (the White Peony), takes place in the east and north of the Chinese province of Fujian. The youngest buds and leaves of the tea plant are used for the Pai Mu Tan. After picking, the buds and leaves are dried in the sun. This drying process can take 1 to 3 days.
