Originating from the Chinese province of Fujian. Only the fluffy "white" leaf buds and first two leaves of the tea plant are picked. This white tea has a refreshing aroma with a sweet, soft, floral taste.

The Pai Mu Tan has a very mild flavour and is somewhat fruity.

The production of Pai Mu Tan, also known as Bai Mudan (the White Peony), takes place in the eastern and northern part of the Chinese province of Fujian. The youngest buds of the tea plant are used for the Pai Mu Tan. After picking, the buds and leaves are dried in the sun. This drying process can take 1 to 3 days.

Pai Mu Than is best prepared with mineral water at 70 ºC (158 °F) to 80 ºC (176 °F)
