Unlike green teas from China, Japanese green tea is steamed after withering the tea leaves. This breaks down the enzymes that initiate the oxidation process of the leaves. In this way, the tea leaves remain green.
Japanese green tea generally tastes slightly more bitter and grassier than Chinese teas.
